Jelly...

<< Mountain Potato's Three layers Cake >>

This is a great cold appetizer in hot summer day... 1st layer is sliced tomato. 2nd layer is mountain potato cake..grated mountain potato mixed with agar, and it cools. 3rd layer is yuzu ponzu jelly..yuzu flavored ponzu mixed with gelatin, and it cools. served with cucumber and shiso dressing. Boiled fresh fava bean for accessory...

Leek..

<< Leek and Eggplant Steak with Miso Aioli & Cheese >> 

1/2" sliced leek and eggplant are cooked on pan until nicely brown...and after, leek is steamed for a while. White miso is mixed with homemade aioli, and pour over on the Veggies.. Also, mozzarella and bread crumbs are sprinkled...and, place in a oven  until nice smell.. Enjoy with sun dried tomato and shiso flavored rice boll :))
