Burdock root is called "Gobo" in Japan.. Skinless Gobo is chopped into thin strips and removed harshness. These are mixed with sweet soy sauce flavored tempura  batter and deep-fry... Grated mountain potato and quail egg for dipping. And green laver (AONORI) for extra flavor...

In Japan, Taro is called satoimo. It is very nutritious and delicious vegetable of autumn...
Boiled and smashed satoimo mixed with soy beans and chopped shiitake mushrooms.. and it is coated with corn starch on all sides evenly... Soba noodles are wrapped with seaweed paper, and cut bite size. Home made tempura sauce is made with shiitake broth, and it must have grated daikon and ginger...

This is the burger without meat, but taste is much better than Hamburger... Portobello mushroom is broiled with home made citrus flavored teriyaki sauce. I used 16 kinds of grains rice cake for buns. It is broiled a little bit become crispy... Rice cake heel, Green leaf lettuce, Tomato, Teriyaki portobello mushroom, white onion slice, Avocado, Arugula and Wasabi mayo.. Truffle flavored roasted potatoes for garnish...

This item will appear in a menu rightly when I open my restaurant.. Soybeans and crushed tempeh are stir-fried in sweet soy sauce. It is make into a inside out roll with white rice, and it winds by the boiled green cabbage.. Served with garlic and ginger flavored spicy tomato sauce...and red cabbage scurf :)

Nam pla is a salty, fermented FISH SAUCE with an extremely pungent odor. ... Nam pla is popular throughout Southeast Asia and is known as nuoc nam in Vietnam and as shottsuru in Japan...  Cucumber and shiso leaf roll are wrapped with pan fried kabocha pumpkins and eggplants.. Stir fried chopped garlic and ginger. Add soy sauce, vinegar, sugar, dried japanese chili paper and nam pla in it and boil a little bit... Pour this sauce on the roll and sprinkle crushed peanuts and sesame seeds.. Green onion and chili pepper for accessory...
