Spaghetti squash contains many nutrients, including folic acid, potassium, vitamin A, and beta carotene. Also, it is low in calories..  Cut the squash in half lengthwise and scoop out the seeds, and boiled in hot water about 15 mins. Drop into cold water and scrape meats gently.. Strain water, and it cooked with chopped garlic, chili pepper, soy sauce, salt and pepper in hot olive oil..  Sautéed asparagus, shimeji mushroom and garlic chips for accessary...

Artichoke..

 Artichoke is available twelve months a year with the peak season in the spring and fall...  Place rinsed and trimmed Artichoke directly into the pot of rapidly boiling water. it does't matter how the Artichoke are placed into the pot since they will float when cooking. Let Artichoke cook at high simmer on stove until they are tender. With a knife or spoon, scrape out and discard the inedible fuzzy part (called the "choke") covering the Artichoke heart. The remaining bottom of the Artichoke is the heart.. Heart Is placed in oven for a while.. Add truffle oil, salt, bread crumbles on the heart..and back to the oven again. when it get golden brown, take out from oven. Served with Vegetables with Yuzu flavored french dressing.. :))

Cha-shu

This is one of my favorite recipes now... Boiled and water out tofu is wrapped in bamboo mat tightly. Removed bamboo matt about 30 mins after, and In a large frying pan, heat sesame oil medium heat and brown all sides of tofu. It will take some time to brown nicely. It is cooked with soy sauce, mirin, sake, sugar, sesame oil, ginger, garlic, green onion and dried red chili pepper... Add boiled egg and served with thin cut of tokyo onion and mustard...

Orange...

Orange chicken sauce!!! Boiled tofu is pressed and water out, and then crushed. Soybeans and chopped onion are mixed well with crushed tofu, starch, a little salt and pepper...and make it small ball. These tofu balls, little potatoes and brussels sprouts are deep fried. Orange chicken sauce is made from soy sauce, vinegar, sugar, sesame oil, garlic, ginger, dried red chili pepper and fresh orange juice... Enjoy home made "orange chicken sauce" with healthy tofu and vegetables instead of chicken meat!!!!

Millefeuille...

This is alike "Eel OSHI-SUSHI" that is made from lotus roots.. Pasted grated lotus roots and dried seaweed are pan-fried. Dip it in home made kabayaki sauce, and broil. It is piled with sushi rice, cucumber, avocado and shiso leaf..and make it a like millefeuille. Served with wasabi yuzu mayonnaise sauce and kabayaki sauce... Very good :))

This is a great cold appetizer in hot summer day... 1st layer is sliced tomato. 2nd layer is mountain potato cake..grated mountain potato mixed with agar, and it cools. 3rd layer is yuzu ponzu jelly..yuzu flavored ponzu mixed with gelatin, and it cools. served with cucumber and shiso dressing. Boiled fresh fava bean for accessory...

Leek..

<< Leek and Eggplant Steak with Miso Aioli & Cheese >> 

1/2" sliced leek and eggplant are cooked on pan until nicely brown...and after, leek is steamed for a while. White miso is mixed with homemade aioli, and pour over on the Veggies.. Also, mozzarella and bread crumbs are sprinkled...and, place in a oven  until nice smell.. Enjoy with sun dried tomato and shiso flavored rice boll :))
