In Japan, Taro is called satoimo. It is very nutritious and delicious vegetable of autumn...
Boiled and smashed satoimo mixed with soy beans and chopped shiitake mushrooms.. and it is coated with corn starch on all sides evenly... Soba noodles are wrapped with seaweed paper, and cut bite size. Home made tempura sauce is made with shiitake broth, and it must have grated daikon and ginger...

It is broiled a little bit become crispy... Rice cake heel, Green leaf lettuce, Tomato, Teriyaki portobello mushroom, white onion slice, Avocado, Arugula and Wasabi mayo.. Truffle flavored roasted potatoes for garnish...

Nam pla is a salty, fermented FISH SAUCE with an extremely pungent odor. ... Nam pla is popular throughout Southeast Asia and is known as nuoc nam in Vietnam and as shottsuru in Japan...  Cucumber and shiso leaf roll are wrapped with pan fried kabocha pumpkins and eggplants.. Stir fried chopped garlic and ginger. Add soy sauce, vinegar, sugar, dried japanese chili paper and nam pla in it and boil a little bit... Pour this sauce on the roll and sprinkle crushed peanuts and sesame seeds.. Green onion and chili pepper for accessory...

I made pancake because I had a lots of ingredients in my refrigerator... tofu, fried potato and tempeh, soybeans, brown rice, cabbage, green onions.... and just make it alike "Okonomi yaki".. Special sauce, mayonnaise and basil flake with accessories... :)

Dumpling...

I think this is healthy japanese style steamed dumpling... Chopped shrimp, onion, ginger, shiso leaf and shiitake mushrooms mixed with soy beans and crushed tofu.. Form it like a small ball and covered with sweet rice. Place into a steamer about 15 minutes.. A little spicy sesame flavored shiitake sauce for dipping... Very tasty!!!

I hated bell pepper when I was kid.. But now, I know how to make it tasty :)  Boiled tofu and soy beans, stir fried tempeh and potato are mixed with mayonnaise. Add herbs, salt and peppers for spice. These are stuffed to the bell pepper.. Place the stuffed bell pepper in the oven and cook for a while until light brown all over..
Chocolate powder for perfume...

I haven't seen this mushroom in Japan... Thick sliced soy sauce flavored portobello steak sushi is made with red wine vinegar rice. Lightly butter flavored mashed potatoes and a little shiso leaf are put on it.. Cinnamon flavored crushed roasted almonds are sprinkled... You can enjoy a lots of flavors at the same time!!!

Tofu..Tofu..Tofu...!!! I marinated silken Tofu in Saikyo Miso for 24 hours. It is called "Saikyo Zuke". I made NIGIRI with brown rice. I put a little Saikyo Miso on top of Tofu, and torched.. a little Shiso and red chili pepper for extra flavor...
